Honey Almond Date Cake
1 cup pitted dates
2 tablespoons olive oil
1/2 cup honey
1 teaspoon vanilla
1-1/4 cup Mandelin Blanched Almond Flour
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
Fresh fruit such as nectarines and plums.
Put dates in hot water until soft. Drain.
Chop dates then put in a food processor. Add olive oil, eggs, honey and vanilla. Mix until blended.
Add dry ingredients - almond flour, baking soda and cinnamon - then mix until combined.
Put batter in a parchment-lined baking pan and bake in a 350-degree oven for about 30 minutes, until an inserted toothpick comes out clean.
Let cool. While still slightly warm, remove from pan and glaze with rhubarb jam. Top with sliced fresh nectarines and plums.
Variation: Glaze with a thin layer of honey and top with sliced fresh figs.
