These protein-packed, no-bake bites make a great breakfast or energy-boosting midday snack.
Pumpkin Cranberry Almond Bites
1/2 cup Mandelin Natural Whole Almonds, chopped
1/2 cup pumpkin seeds
1/4 dried cranberries
2 cups oats
1/4 cup canned pumpkin puree
1 teaspoon pumpkin pie spice
1/4 cup Mandelin Natural Roasted Almond Butter
1/4 cup honey
Combine by mixing all the ingredients in a large bowl.
With wet hands, take a handful of the mixture and roll it into 1-inch balls. Set on a parchment paper lined baking sheet.
Place in the refrigerator for 20 minutes (or the freezer for 10 minutes), then transfer the energy balls to an air tight container.
Store in the refrigerator.
