This simple, but elegant dish will become a family favorite.
Chicken With Almonds And Tarragon

4 boneless, skinless chicken breasts
1/2 cup butter
1/4 cup plus 2 tablespoons flour
1/4 cup green onions, sliced
1/4 cup Mandelin Blanched Slivered Almonds
1 teaspoon beef concentrate
1-1/2 cup chicken stock
1/4 cup white wine
3 tablespoons fresh tarragon
salt and pepper to taste
Lightly flour chicken breasts in 1/4 cup of flour and brown in 1/4 cup butter over medium-high heat in pan. Season with salt and pepper. Remove chicken from pan.
To pan, add remaining 1/4 cup butter and green onions. Sauté for 1 minute. Add slivered almonds. Sauté for 1 minute. Add beef concentrate and remaining flour. Sauté for 2-3 minutes. Add chicken stock and white wine.
Return chicken breasts to gravy. Add 2 tablespoons tarragon. Cover and simmer 20 minutes.
Serve with rice or egg noodles. Sprinkle with remaining tarragon.
