Baked Zucchini Fries
Preheat oven to 425°F.
Cut the zucchini into 4-6" fries. Trim both ends, slice down the middle lengthwise, cut each half in two widthwise, then slice into equal sticks. If they are especially watery, blot them with a paper towel.
Whisk the egg in a small bowl. In another bowl, mix together the almond flour, Parmesan, Italian seasoning and salt.
Line a baking sheet with parchment paper. Dip each stick into the egg wash, shake off any excess, then coat evenly with the almond flour mixture. Place each stick on the prepared baking sheet. Spray fries with olive oil.
Bake for 10 minutes, remove and flip, then return to the oven for ten more minutes until crisp. Serve immediately.
Pair with your favorite dipping sauce. Marina sauce goes really well with this Italian flavoring, too.
